1) Just because it tastes good and smells good as a syrup doesn't mean it's good carbonated
2) Lime makes everything taste better
3) Use extra ginger
4) 2 cups water, 2 cups sugar(s)
5) Buy extra tupperware
6) Make candy
7) Real cherries impart a distinct powdered sugar flavor, regardless of a lack of powdered sugar in the batch. Use good ones in season, then add liquor and/or half and half
8) Vanilla bean always tastes better the second time you use it
9) Making lists is hard
10) Root beer costs your first born and three goats in ingredients. Don't make it unless sarsaparilla grows wild in your backyard.

Moving onto black cherry vanilla, starting tomorrow. And Tanks, I think I will take your advice and add a bit of chocolate to it. I'm going to be using actual vanilla bean though, so in keeping with my Fuzzy Bunny retentiveness, I'll probably spend the day searching for cocoa beans/nibs.

That's... a bit out there for me... Also, I don't plan on making cola or decyphering the Dr Pepper recipe, but I may experiment with chocolate in other sodas like root beer.

Anyway I may as well post the recipe for my last batch of ginger ale. This is a syrup, so you can mix it with any club soda (or, God forbid, tonic water) that you want. It's not as spicey as my first batch, but it also doesn't smell like a urinal. I've gotten a few liters out of it so far, and there's still half the container left of syrup. At around 5 bucks for the investment (most of which is the squeeze ginger) it's pretty cost effective.

Ingredients:
4 oz Squeeze Ginger
4 cups water
4 cups sugar
4 Tablespoons clover honey
4 limes (zest and juice)
Dash of sea salt
Dash of cayenne (when no one is looking)


Boil all of the ingredients (except the limes) in a sauce pan on high. The goal is to reduce it all into a syrup; it'll finish at around 1.5 to 2 cups of golden liquid. Add the limes, half at a time, throughout the the boil. You should be adding the last of the juice to the syrup when you're removing it from the heat. Pour it through a strainer to get the sludge out of it. I suspect that crap can be used to make candy, but this will require more research (and possibly another thread).

About four spoonfuls is enough for a small glass of soda. Pour it in the glass first, without ice, and then add the soda. You can add ice afterward.
