That kind of already exists, it's called voice recognition software
Though the dictation doesn't always work that well

And since we moved to the VPS, Glodenox has been doing our backups, which he does frequently and stores off-site. So if we had a total loss of the server now, we would likely only lose a few hours of data rather than a few months...
